Peter Dillon, Manager/Sommelier
 |
Peter,
39, has spent seven of the past 10 years cruising the worlds oceans, but is now
pleased to have his feet firmly planted on dry ground as Terrace Restaurant's
Manager / Sommelier. Peter holds a Diploma of Hospitality Management and Diploma
of Wine and has worked at some of Australia's finest establishments, including
Sydney's Ritz Carlton, Melbourne's Grand Hyatt and Brisbanes' Vino Restaurant. While he thoroughly
enjoyed travelling the world on renowned cruise ships such as the QE2 and QM2,
Tasmania's
reputation for fine wine and premium produce lured him back to port. When Peter
is not sampling boutique wines or tracking down rare vintages, he enjoys
improving his golf handicap, hiking, squash and reading. |
Sean Keating, Executive Chef

Sean, 38, joins us from Melbourne. Sean has honed his skills in the kitchen over 15 years with experiences in such fine establishments as Matteos, Jimmy Watsons and European. In addition to his vast experience working with some of the countries finest chefs, Sean is also an experienced
fine art photographer having travelled to London and Spain, as well as all around Australia exhibiting his work. Sean settled in Launceston as he found the quality of the food here hard to miss. His passion for this produce is more than evident when scanning the menu at the Terrace where almost all of his dishes ingredients are sourced from the surrounding area. |
